There is no easy to solution to monitor each and every click user makes. However, a common packet sniffe such as tcpdump or Wireshark may be useful to get this kind of info on your own network.

Wireshark: Go deep.

Cool

Tell Me,which Linux Server You Are Using? If you are using Squid & want to monitor user graphs, you can use SARG( Squid Analysis Report Generator) tool.

SARG will provide you GUI environment for a single user's internet usage, total downloaded files, accessed sites & Top Sites of the day....& many more.

Check & Apply. I am using this tool & it is working fine.
