Learning shell and Perl scripting was one of best things I did..
I use rsync for a lot of back up and recovery setups. I use it to mirror directories and other fun stuff. When I was first introduced to a properly configured rsync string, I was blown away in regards to the capabilities that it had.

+1 rsync.
If you like rsync try rsnapshot to keep daily, hourly, weekly, monthly snapshots. It saves disk space. Perfect for building online backup server.
tar and dump are must for offsite tape backup.
Amanda and zrm for mysql is also recommended.

to backup my host i use DAR [1] (ba!.. in really i make a bash script using them)..
in my opinion, is a good choice if you want to implement full, partial or incremental backup strategy.
