Default Email Server, suggestions?

Hi!

I'm new to these forums, but ran across them last week while searching for online help with my situation.

I currently have an older Compaq desktop (basically gutted and now has a 3.4GHz P4, 2GB RAM, updated mobo, graphics card, gigabit NIC, and a smaller sized Raptor HDD). I work for a summer theater camp that is possibly looking to split from the local recreation commission to start our own company in a sense. I suggested the idea of building an email server now that would cost next to nothing to run so that everyone is on a centralized contact system. This server would run in my basement (assuming that I can use port 25 through my ISP, and then the 50+ employees would all connect through Microsoft Outlook or something similar from their home computers.

My question to everyone is: What should I use software-wise, and how do I go about setting it all up? If someone could help me personally or link me to a thorough step-by-step that would be fantastic! I've been using this link to get a start, but it still is a little vague. Any help would be appreciated!
